These kits are made to OEM specs for the models listed. Twin Power doesn't call out the specs for the kits.
Are springs single or double in this kit

1999 Harley fat boy evo. Currently have double springs but would rather single to prevent valve float. And also have andrews ev-27 cam with. 495 lift. What is the lift on these.

These would be single springs, just like what would have came stock on the models listed. These are meant to be a stock style replacement not specified for use with high lift cams.
